Does anyone have a good business plan for a soup, salad and sandwich shop?

I'm plannig on moving into southeast Virginia area and i would like to open a Soup, Salad and Sandwich Shop. I've taken resturant management courses and have written my own plan. But I like to compare it with others for ideas. i'm willing to share mine.

Since you will be in VA, make sure you have roadkill on the menu somewhere.

Basics. I don't know what your offerings specifically consist of but that can be tailored to your plan as unique. A location with estimates of rent, utilities, and insureance. FF&E fixtures, furnishings, and equipment. Anything that will be used that is not already in the leased unit. Estimates on employees wages, cost of food, other operating expenses. These expenses monthly are the operating expenses of keeping the doors open. At the bare minimum I would suggest a cash outlay of this number multiplied by six to open the doors. The rest of the money can be loaned but at this ratio it is risky. You had better be a firm believer in your plan. Depending on how you intend to get people in the door you must consider location and advertising.
Total the expenses with a break even point of customers based on average purchases of customers. Use that to determine the minimum amount of business neccesarry to stay open and determine if you have wages for running it. Of course reinvest the wages unless you are planning on running the business only for a couple of years and selling it. A demographic of suggested locations, maybe different numbers and versions of the store for a variety and to determine the best profitablity. All of this together typed and accurate should be enough to get a note started from some banks depending on your credit and assets. And also look at getting a small grant from the government.
