Want to open a business in Ireland.?

I am an Irish Citizen living in Canada and I would like to return to Ireland to open a small business.

The business that I am looking at is a Wine & Oil (special oils / olive and such) Shop. I wonder if this type of shop would be good seeing how Whiskey is the largest drink of choice by most Irish in Canada.

Also can you give a web site that gives the answer to what I need to do and how to apply for a business license?

As for taxes I understand VAT (Value Added Tax) because I am a Business Consultant / Accountant in Canada. Though I wonder about taxes paid for employees so help me here too, please.

I would also need to know how to make arrangements for locating a store front. I want to know what are the hours and days that stores are allowed to open.

If you can help me I would appreciate it very much.

Also if I have left anything out please let me know. I understand business in Canada but need to learn how businesses are operated in Ireland.
