I can't find the podium in The sims 2 open for business, where is it?

I also heard that you have to use a special oven to be able to have a restaurant for a business- I don't see this either. I tried using just a regular counter for a podium but it doesn't work. I don't get the waitress or host options and thats what I'm missing.

You can only find it in the buy/build option on community lots (i don't think its available for a home business). It should be available under the restaurant/food/appliances secton in buy mode, and if it's the first time you've selected it for building a restaurant a tip will pop up on the screen to explain about them.
