The error here is by:
"Simply let your co-worker know how you feel and politely ask them if they would mind curtailing their annoying habit."

it should be:
"Simply let your co-worker know how you feel and politely ask him if he would mind curtailing his annoying habit."

MISPLACED MODIFIER: The word 'ONLY' should modify 'one', not 'have.' The second sentence uses plural pronouns for the singular 'co-worker.'

I'm not sure if I'm catching everything, but I do know that in the sentence "Simply let your co-worker.....ask them...they..."
a "co-worker" is a single subject, however "them" and "they" are plural pronouns. "Them" and "they" should be "he" or "she" and "his" or "her".

Simply let your co-worker know how you feel and politely ask them if they would mind curtailing their annoying habit."

There is a problem with the use of them, they & their. "Simply let your co-worker know how you feel & politely ask (TAKE OUT THEM & put in him or her). That is all that I can see.

"... Simply let your co-worker know how you feel and politely ask him if he would mind curtailing his annoying habit."

or

'...Simply let your co-worker know how you feel and request that he curtail his annoying habit."

Co-worker is singular, so it should be something along the lines of "...politely ask him if he would mind curtailing his annoying habit."
